I added brackets to the upper-level plan so that they would show up on the exterior, but I can't figure out how to hide them on the plan?? The ones in the gable peaks especially since they show up in weird places on the plan.

I use a layer to hide them on the plan.

I also, like Rick, use a layer called Hidden items

Snap ... Every drawing I do has a layer called "HIDDEN" that's set to NO PRINT, just in case I leave it on.

You could however, just check "HIDDEN" on the edit menu (assuming it's a symbol), although it's still semi-visible, it doesn't print.

So embarrassing to admit...but I've never done anything with the layers settings! I just made an attempt to figure it out, but it didn't work. I set up a non-visible layer, set to not print, and then changed under the symbol's definition to default to that layer. Did I miss a step?

Make sure to uncheck the visible box.

Although you have the symbol defaulting to that layer, you will still have to set each individual symbol already used to be on that layer. Once they are positioned they take the attributes they had at the time they were drawn.
