Is there any way to edit the electrical symbols that SP ships with? 

There are a few that I use often that I would like to change. 

Or a way to add new ones?

You can explode and modify the electrical symbol (applies to any symbols) and save it as a new symbol. You'll need to link a 3D symbol to it if you want or need it.

System Options>System Library>Electrical>One Step or Use the Wizard

A ".spy" is the file type that a symbol is.

With a construction point added, the connection will go to the closest construction point within the locate tolerance. In the case of symbols that contain light sources, it will connect to the center of the light source if it is closest and within the locate tolerance.

 

Without a construction point, the connection will still find the Electrical symbol but the connection will go to the center of the symbol.

 

Using Cursor snap (F11), the connection will go to the closest snap point of the shapes within the electrical symbol.
