How do I add (or extend this upper hip roof to create a gable at the ridge? I have cut a hole in the lower roof.

Well, I figured out a way to do it.  I'm not so sure if it is the best way.  I created a false gable (about the same size as the hole) the lower eaves.  I then moved the gable and tweaked it until it fit.  Perhaps there is a better way?

That is the way I would have done it, Edward.  Mostly because there is not a good lollipop to create a gable from one of the edges.  The only other way that possibly could work would be to make it a Dutch gable on the side and modify it that way, though I believe it might be a lot harder

Yep, you're doing it the same way I do as well.
