In SP 2020 the default gable end setting is "built up beam".  How do i change this where it is siding "A" or some other material that makes sense.

Go into "system options", "material dimensions", "roof options" and change it there. Then, change it in any existing drawings or projects as needed either individually or by resetting the drawing or project to system options. If you have any drawing or project settings different from your system options do it individually.

It is reading the wall below the roof to apply the gable end finish. That can be overridden on an edit of the gable.
