When I edit a symbol, the edit does not show up the project, for exaple, I change a 2' window to a 2'3" window.

When I go back in to recheck the edit it says 2'-3" in the system option but does not update in  the plans.

Why?

Go to Drawing options Library find the window and click on "Reset Symbol". Then you may have to edit that window in the drawing and uncheck product code and recheck it.

As Richard suggests. UNCHECK and RECHECK product code. Openings typically don't regenerate correctly until you do.

Bear in mind ... Adjustments made at system level ONLY affect projects opened after the adjustments are made. Drawings follow PROJECT OPTIONS, not SYSTEM OPTIONS, So you have do do resets to project for drawings and reset to system for project to initiate changes made at system level.
