I want to be able to only see studs in my floorplan (my walls have gypsum siding incorporated in them)  

 

How can i get all layers besides studs to turn off in floor plan (while showing them in other views such as sections and details?

Go into the wall edit menu and uncheck visibility of lines you do not want to see in plan view. The materials will still show up in section and elevation per how you have set those visibilities.

If you want it to be set for all future projects you would go to System Options, Define Wall, Edit and make changes there for each wall definition you want to look different. Then on any existing drawings/projects you can just highlight the Define Wall option and click Reset to System if you have no worries about any potential custom walls in those projects.
