Manually added ceilings don't seem to show up in finish schedules, only when you clikc 'enable" ceiling in
the room schedules does it allow ceilings to show in the finish schedule.
Any way around this?

What is the benefit of manually adding ceilings?

You can still customize an auto ceiling to slope it. I find the only time I need to add a manual ceiling is when I have half height walls, which Softplan tries to put a ceiling round at the half height wall level.
