How do I approach creating a triple tray ceiling with crown? See attached image for an example of what I after.

add a bunch of stepped walls that are either hidden then apply ceiling planes to them. you'll have to cut lower ceiling plane holes so you can see the steps going up.
what i do is: create another model drawing above this level then add the walls and ceilings (too much confusion of hidden stuff on the main floor plan if you do it that way)
the second image is the upper model drawing showing my walls which ceiling planes are attached. i have a thin wall i call 'drywall only' i use it for this stuff along with open floors, catwalks, lofts and such.
it may be time consuming but you'll get the customer wow factor when you're done.
my customer is just looking for 1 step and drywall beams (3rd image)
