I created a lot of symbols and had the same issue. It only affects the thumbnail view of the symbol in the symbol selection window. In the various schedules the appear normally. It hasn't been a problem yet so I haven't looked for a solution.

if toms suggestion doesn't work >
try this:
in your drawing > at the very top
go to / options / and at the far right column,
there is "paint in symbols"
if it's checked / UNcheck it
Randy, I don't see "paint in symbols" under options...I'm using 2016, does this only apply to 2014?
I'm experiencing the same problem, but I noticed it's not doing it on all the drawings in my project. My system and drawing options are set the same across the board, but the main floor is printing some of the symbols solid black (notice the clothes hangers are fine). I also noticed the beams are filled with a color instead of just dashed lines. I tried to edit them in define beams, but I couldn't find anything to change that would get them back to dashed lines.
Any suggestions?

I think he is talking about his library window and not the actual symbols on the plan.
Most likely trying to select a new texture within SoftView where many plants in particular are on a black background.
If this is the case than I suppose that you could try turning up the brightness and contrast of your monitor.
