Is there a way to cover the ends of the soffits (circled in red in the image) with the wall siding?

If I understand your question, I have sometimes drawn separate walls offset to the correct height with the top sloped to roof. If you put them on their own layer and turn off the layer they will show up in 3D but not in the drawing.
