I really think something is wrong with the size/scale of my lights ...

Perhaps I shouldn't have changed the default fixture.

For the sake of this project, I've turned off "Extract in Model" for this symbol, but I do think that it needs to be fixed.

I've had something similar happen in the past. Did you verify if that symbol has the box "Use 3D Symbol Dimensions" checked. If it has, then it"s keeping the original symbol dimensions. The width and depth in this case only relates to your 2D symbol.

It was turned on (checked), but turning it off and resetting the drawing symbol and performing a cleanup/regenerate etc. doesn't seem to do anything, and I can't seem to fix it. Maybe just me.

 

Having said that it shouldn't be that difficult for Softplan themselves to fix the size of the original 3D symbol.

Maybe, but it depends on the angle you view it ... Viewed from slightly underneath, it looks like something completely different ... especially on a slight angle like they are ...
